My Recipes :)

Kothimbir Wadi








Ingredients:
Kothimbir judi : 1
Besan : as required roughly 2 vati
Salt as per taste
Sugar: 1/2 t-spoon
Dhana-jira powder-2 tsp
Red chili powder: 1 tsp
Turmeric powder: 1 tsp
Oil: 1 tsp

Recipe:
1.  Grease a cooker dabba with little oil.
2. Wash kothimbir and cut as fine as possible
3. Take one bowl, add kothimbir, salt, turmeric and red chili powder, sugar, Dhana-jira powder, 1tsp oil.
4. Mix it well and then add besan to make rolls out of the mixture
5. Add water only if the mixture is very dry, but normally after washi the kothimbir the moisture is enough for making rolls.
6. Make 3-4 rolls of size which can fit in the dabba
7. In a pressure cooker , add water put the dabba and make 2-3 whistles
8. Let cooker get cool and then remove the dabba from it.
9. Let the rolls also cool for some time, so you can cut them easily. Best way is to reverse them and keep it in fridge.
10. Once the rolls are at room temperature cut small wadi from the rolls .  Heat a tawa, arrange the wadis and add some oil from side and shallow fry till golden.


Malai Kofta:










Ingredients:
Paneer - 150 gms
Maida- 2-3 tablespoons
Coriander powder - 2 tsp
Jeera powder- 2 tsp
Salt- as per taste
Oil: 3 to 4 big spoons
Tomatoes : 3 cut into quarters
Cashews: 4-5
Cream: 3 tsp 
Mustard, Jeera
Corn flour paste-1 tsp flour and some water
Sugar- as per taste - 1/2 tsp
Red-chilli powder
Garam masala-1/2 tsp
Turmeric powder- 1/2 tsp

Recipe:
1. Boil tomatoes and kajus and make a paste.
2. Grate paneer, add maida 1-2 tsp., coriander and jeera powder, red chilli powder and salt . Mix well and make small balls. coat them with little maida and remove excess flour.
3. Fry the paneer balls in oil. Keep aside. Remove extra oil and keep roughly 3 tsp oil in kadhai
4. Prepare tadka with mustard seeds and jeera in the same oil. Add turmeric, red chilli powder. Add the paste fry for 4-5 minutes till oil separates. Add 1/2 tsp sugar.
5. Add 3 tsp cream, fry for some time.
6. Add 1 cup water to gravy , bring it to boil.
7. Add the corn-flour paste.
8. Add the balls and cook for a minute.
